1poundground pork sausage or turkey sausage, browned
1poundthick cut bacon, cooked and crumbled
120 ouncebag diced breakfast potatoes, thawed
1 red pepper, seeded and diced
1green pepper, seeded and diced
2tablespoonwater
1dozenlarge eggs
2tablespoonvegetable oil
8burrito-sized flour tortillas
1cupshredded Mexican cheese blend
Instructions
Cook the bacon according to the directions on the package. Blot off the excess grease. Crumble when cool and set aside.
Cook the sausage in a large skillet over medium heat until no longer pink. Drain the excess grease. Pour the sausage into a small mixing bowl and set aside.
Wipe the skillet clean with a paper towel and return it to the heat. Add the oil, potatoes, and salt, and pepper to taste. Saute for 10 minutes, or until the potatoes start to brown.
Add the diced peppers and cook for an additional 5 minutes or until tender. Remove from the heat.
In a large mixing bowl, add the eggs and beat with water. Pour the mixture into a clean skillet. Scramble over medium-low heat until done.
Build the burritos. Layer the scrambled eggs, potato mixture, and sausage or bacon on the flour tortilla shell. Sprinkle with cheese and roll up.
Notes
To cook and enjoy immediately: Place the burritos on a baking sheet and warm in the oven on the "HI" broil setting for 5-7 minutes or until the cheese is melted and the tortilla shells are a light golden brown.To freeze for later: Wrap the burritos in foil and place them in the freezer in an air-tight food storage container bag. When ready to eat, remove the burrito from the foil, and microwave on high for 1-2 minutes or until hot.
