There’s nothing quite like a comforting casserole for a hearty and delicious breakfast or brunch.

This bacon, egg, and potato bake is a cinch to prepare, making it perfect for feeding a crowd.

After all, who doesn’t love the classic combination of crispy bacon, fluffy eggs, and tender breakfast potatoes?

Ingredients for Cheesy Bacon Egg and Potato Bake

  • 1 bag (30 ounces) frozen cubed potatoes, thawed
  • 1 pound bacon
  • 1 cup shredded cheddar cheese, divided
  • 8 eggs
  • 2 cups skim milk
  • salt and pepper to taste

Equipment Needed

  • Mixing bowls
  • Rubber spatula
  • Measuring cups
  • Microwavable bacon grill
  • Cheese grater
  • 9 x 13-inch rectangular baking dish

Instructions for Bacon And Egg Potato Bake

Step 1: Cook the Bacon

Preheat your oven to 350℉. 

While the oven preheats, use a microwavable bacon grill to cook your bacon until it is crispy. (This typically takes around 4 to 6 minutes depending on your microwave’s wattage)

Once your bacon is cooked, carefully remove the grilling tray from the microwave and place your bacon on a paper towel-lined plate to drain off any excess grease.

After the bacon is cooled, crumble and set it aside while you mix the rest of the ingredients for the egg bake.

Step 2: Mix the Bacon, Potatoes and Cheese

In a large glass mixing bowl combine the thawed breakfast potatoes, crumbled bacon, and 1/2 cup shredded cheddar cheese.

Season the mixture generously with salt and pepper to taste.

Then give everything a good stir to combine the flavors and spoon the mixture into a greased 9 x 13-inch baking dish.

Tip from Jen’s Kitchen: Forget to defrost your potatoes?

No worries!

Dump the frozen potatoes into a strainer and rinse under cold water until the cubed potatoes thawed.

Then drain off any excess water, and you’re ready to go!

Step 3: Combine the Egg Bake Mixture

In a separate bowl, beat the eggs and milk until blended.

Then pour the eggs over the potato mixture and place the baking dish into the oven.

Step 4: Bake and Top with Cheese

Bake the egg casserole uncovered for 45 minutes, or until a toothpick inserted near the center of the bacon egg and potato bake comes out clean.

This ensures the eggs are fully set.

Remove the casserole from the oven and sprinkle the remaining cheese over the top.

Let your egg bake sit for a few minutes to allow the cheese to melt slightly, then serve it warm and enjoy!

Ingredients

  • 1 package frozen cubed potatoes (30 ounces), thawed
  • 1 pound bacon
  • 1 cup shredded cheddar cheese (divided)
  • 8 eggs
  • 2 cups skim milk

Instructions

  • Preheat oven to 350℉. While the oven preheats cook bacon according to directions on the packaging. Drain grease, as needed, let cool, and crumble.

Notes

This recipe can be prepared in advance. Just make as directed and keep refrigerated overnight. Remove from the refrigerator 30 minutes prior to baking.

      Thank you, Paula. My husband is a big fan of sausage, but I prefer bacon too. This recipe is great because it is so versatile. You can add in other meats and vegetables as you like.
