We are sharing some of our favorite, Irish-inspired fare with a menu that includes everything from chocolate cheesecake cups to my garlic and chive roasted baby potatoes. You can see the full Saint Patrick’s Day menu and all of the recipes linked at the bottom of this post.

If you missed it, don’t forget to visit part one of our virtual supper club party to see five different ideas for how to style a Saint Patrick’s-inspired table, including my elegant green and gold tablescape.

Hello and Welcome!

If you are a new friend visiting from Stacy at Bricks ‘n Blooms, thank you for swinging by. Doesn’t her Irish cheddar and beer fondue look amazing? My name is Jen. I’m a wife, mom of two, and lifelong Nebraskan. I’m a full-time event planner at a local liberal arts college turned weekend and late-night DIYer and blogger. You can read more about me [HERE].

If you are a carb lover like me, I think you’ll agree that they are the perfect side dish to complement just about any meal. And what is a Saint Patrick’s Day dinner without potatoes?

  • 1 Tablespoon minced garlic
  • 3 Tablespoons chopped chives
  • 1/8 teaspoon ground black pepper

Instructions for Garlic And Chive Roasted Baby Potatoes

Step 1

Preheat your oven to 400℉. Then, melt the butter in a small saute pan over medium-low heat. When the butter is melted, add the garlic, chives, black pepper, salt, and Parmesan cheese. Stir to mix well.

Step 2

Toss the potatoes with the butter mix. Stir to coat and then transfer them to an oven-safe baking dish. Cover the potatoes with aluminum foil and roast for 45 minutes.

Step 3

Test the potatoes with a fork or knife to confirm that they are tender. If they are still a bit firm, just roast for an additional 5-10 minutes or until they are done.

Step 4

When done, remove from the oven. Spoon the excess butter mixture from the bottom of the baking dish over the potatoes. Sprinkle with additional chives and Parmesan cheese if desired and serve immediately.

How to Store Leftovers

Leftovers can be safely stored in the fridge for up to 4 days. I like to keep mine in an airtight food storage container like these glass containers. I received a set of them this past fall and they have become my go-to containers for keeping leftover food tasting fresh. My favorite feature is the easy vent lids. No more messy microwave explosions. Hallelujah! And they are dishwasher safe for quick and easy cleanup.

Thank you, Aliya. I totally understand the strange food aversion. Other than on a hamburger or pizza, my oldest doesn’t like cheese. What??? No grilled cheese, no cheese on casseroles. Nada. I don’t know how she is my kid.😂 Thanks for stopping by today. I hope you and the hubby enjoy the potatoes!
