Leftover Turkey and Provolone Sliders

Much like Mr. Parker (aka Ralphie’s dad from A Christmas Story), Mr. MWLS loves his turkey. Each year, he makes it his mission to find the biggest bird possible for our Thanksgiving meal. And much like Ralphie, I look forward to all of the leftovers! Turkey soup. Homemade turkey pot pie. Turkey tetrazzini. And leftover turkey and provolone sliders.

These quick and easy sandwiches are great as a main course or they pair perfectly with many of my favorite cozy soups. And, with just seven ingredients, they’re ready in only 30 minutes.

Ingredients for Leftover Turkey and Provolone Sliders

  • 1 (12 ounce ) package King’s Hawaiian Sweet Rolls
  • 1/2 cup mayonnaise
  • 3/4 cup honey mustard sauce (divided)
  • 1 pound sliced turkey
  • 6 slices Provolone cheese
  • 1/4 cup butter (melted)
  • 1 Tablespoon poppy seeds

Instructions for Leftover Turkey and Provolone Sliders

To begin, preheat the oven to 350℉. Then, spray a 9×13″ baking dish with nonstick cooking spray and set aside.

Next, take the Hawaiian rolls out of the package, making sure to keep them all together. Use a serrated knife to cut the rolls in half to make a top and bottom.

In a medium-size mixing bowl, combine one half cup of the honey mustard sauce with one half cup of mayonnaise. Mix until combined. Place the bottom half of the Hawaiian rolls in the baking dish, and then spread half of the mixture onto them.

After the mixture is spread, begin to layer the rolls with the sliced turkey and provolone cheese. If you also have a picky cheese eater in your house as I do, you can leave it off altogether. Or, swap out the provolone for some other varieties like a swiss or sharp cheddar.

Then spread the remaining homey mustard mixture onto the other half of the rolls and carefully place them on top to form the sliders.

Now, whisk together 1/4 cup melted butter with 1/4 cup honey mustard and the poppy seeds. Pour over the top of the sliders and spread the mixture out with a spoon or spatula.

Place the baking dish in the oven, and bake the sliders for about 15 minutes, or until the rolls start to turn golden brown and the cheese is melty.

I am confused about the honey mustard called for in one place and the honey mustard sauce called for in another place in this recipe.
Is this a sauce you make? What ingredients do you use?

      Hi Lyndel,

I’m sorry for the confusion. While you can certainly make honey mustard dipping sauce from scratch, I just buy it pre-made in the store. We love the Sweet Baby Ray’s brand, but you can use kind. The recipe uses 3/4 of a cup altogether. 1/2 cup is combined with some mayonnaise and used to spread on the rolls before layering on the turkey and cheese. Then 1/4 cup is combined with melted butter and poppy seeds to baste over top of the sliders. I hope that helps clarify. Enjoy!

These are very similar to those “funeral sandwiches” everyone was making on Pinterest a few years ago! Yum! Great with ham!
