Around here, my husband is no different. Every year, he makes it his mission to find the biggest bird he can for our Thanksgiving dinner.
And if he’s Mr. Parker in our relationship, then I’m definitely the Ralphie. While he’s focused on carving the turkey, I’m already dreaming about all the ways to use the leftovers like turkey soup, homemade pot pie, and these easy turkey and provolone sliders on Hawaiian rolls.

They’re one of my favorite ways to turn Thanksgiving leftovers into something quick, cheesy, and delicious. These turkey sliders are great as a main course or paired with one of my favorite cozy soups.

Mayonnaise: Adds creaminess and helps the sauce stick to every layer. Use your favorite brand for the best flavor.
Honey Mustard Sauce: Brings a little sweetness and tang that ties all the flavors together. You can use store-bought or make your own with equal parts honey and Dijon mustard.
Sliced Turkey Breast: Leftover Thanksgiving turkey works perfectly here, but deli-sliced turkey breast is just as good if you’re making them any other time of year.
Provolone Cheese: Melts beautifully and adds a mild, creamy flavor. Feel free to swap in Swiss, cheddar, or even mozzarella if that’s what you have on hand.

How to Make Turkey and Provolone Cheese Sliders
Ready to make a pan of these turkey provolone sliders? Here are the easy step-by-step directions. There’s also a full printable recipe card with all the ingredients and instructions at the bottom of the post
Step 1: Slice Your Rolls
To begin, preheat the oven to 350℉. Then, spray a 9×13″ baking dish with nonstick cooking spray and set aside.
Next, take the Hawaiian rolls out of the package, making sure to keep them all together. Use a serrated knife to cut the rolls in half to make a top and bottom.
Step 2: Make Your Sauce
In a small bowl, mix ½ cup of the honey mustard with the mayonnaise to make the sauce for your turkey and cheese sliders.

Stir until everything’s mixed together, then set it aside while you get the sliders ready to assemble.
Step 3: Assemble Your Sliders
Place the bottom half of the Hawaiian rolls in the baking dish and spread half of the honey mustard sauce over them so they’re evenly coated.



Once the sauce is spread, layer the rolls with sliced turkey and provolone cheese.
If you have a picky cheese eater in your house like I do, you can leave the cheese off or swap the provolone for another variety, such as Swiss or sharp cheddar.
Spread the remaining honey mustard mixture on the cut side of the top half of the rolls, then carefully place them on top to form the sliders.
Step 4: Brush with Your Butter Mixture
In a small bowl, whisk together the melted butter, the remaining ¼ cup of honey mustard, and the poppy seeds.


Pour the mixture over the sliders and gently spread it out with a spoon or spatula so the tops are evenly coated.

Place the baking dish in the oven and bake for about 15 minutes, or until the rolls are golden brown and the cheese is melted and gooey. Keep an eye on them toward the end so the tops don’t get too dark.

How to Store and Reheat Leftover Sliders
In the Fridge
Keep any leftover sliders in an airtight container in the fridge for up to two days. When you’re ready to reheat, wrap them in foil and place them in a 300°F oven until they’re warmed through and the cheese is melted again.

This keeps the rolls soft and the cheese melted without drying out the turkey.
In the Freezer
If you want to save a few for later, these sliders freeze really well. Let them cool completely after baking, then wrap each one tightly in foil and place them in a freezer-safe bag or container.
They’ll keep for up to one month. Label the bag with the date so you know when they were made.

When you’re ready to enjoy them again, move the sliders from the freezer to the fridge and let them thaw overnight.
To reheat, keep them wrapped in foil and warm in a 300°F oven until heated through and the cheese is melted.

Easy 30-Minute Turkey and Provolone Cheese Sliders
Ingredients
- 1 package King's Hawaiian Sweet Rolls (12 ounces)
- ½ cup mayonnaise
- ¾ cup honey mustard sauce (divided)
- 1 pound sliced turkey
- 6 slices provolone cheese
- ¼ cup butter (melted)

Instructions

I am confused about the honey mustard called for in one place and the honey mustard sauce called for in another place in this recipe.
Is this a sauce you make? What ingredients do you use?

I’m sorry for the confusion. While you can certainly make honey mustard dipping sauce from scratch, I just buy it pre-made in the store. We love the Sweet Baby Ray’s brand, but you can use kind. The recipe uses 3/4 of a cup altogether. 1/2 cup is combined with some mayonnaise and used to spread on the rolls before layering on the turkey and cheese. Then 1/4 cup is combined with melted butter and poppy seeds to baste over top of the sliders. I hope that helps clarify. Enjoy!
