Ingredients
1 storebought pie crust
1poundbacon, cooked and chopped(one 12 oz. package)
4 eggs, beaten
1 cuphalf and half
1 teaspoon salt
¼ teaspoonpepper
1cupfresh spinach, chopped
1 cupshredded swiss cheese
1 Roma tomato, thinly sliced
Instructions
Preheat oven to 350℉.
If using a storebought pie crust, bake it first per the directions on the packaging.
While the crust bakes, in a medium-sized bowl, add the eggs, half and half, salt, and pepper. Beat until light and fluffy and set aside.
In a skillet, cook the bacon until crispy. Remove from heat, and place on a plate with paper towels to blot off excess grease. Then cool and chop.
Wash and chop the spinach. Layer chopped spinach and chopped bacon in the bottom of the baked pie crust.
Place the pie crust in the oven on a low rack and carefully pour the egg mixture over the top of the spinach and bacon. Sprinkle on the cheese and bake for 30 minutes.
After 30 minutes, remove from the oven and add a sliced Roma tomato on top of the quiche. (optional)
Return to the oven and cook for an additional 20-30 minutes or until the middle is set and a toothpick comes out clean when placed in the center of the quiche.
