6-8medium peaches(blanched, peeled, and sliced)
2cupsstrawberries(sliced)
1tablespoonlemon juice
2tablespoonsgranulated sugar
¾cuppacked brown sugar
¾ cupall-purpose flour
1teaspooncinnamon
½cupcold butter(cut into small cubes)
¾cupquick-cooking oats
Instructions
Preheat oven to 375℉. Grease an 8 X 11-inch baking dish with butter or non-stick baking spray.
In a large mixing bowl, stir together the peaches, strawberries, lemon juice, and granulated sugar. Pour into the baking dish and set aside.
Add the brown sugar, flour, cinnamon, and butter to a food processor. Use the pulse setting to mix together the ingredients until the topping resembles pea-sized pieces.
Carefully transfer mixture to a separate mixing bowl. Stir in the oats until combined and crumbly.
Sprinkle the crumb topping over the peaches and berries.
Place the baking dish in the oven and bake for 30 minutes or until bubbly and the crumb topping is golden brown.
Cool slightly before serving.
Notes
If you do not have a food processor, use a pastry blender to cut in butter with the flour, brown sugar, and cinnamon.Serve with vanilla ice cream or whipped topping if desired.
