Monkey Bread
3 tubes buttermilk biscuits(8 ounces each)
1 cupgranulated sugar
2teaspoonsground cinnamon
½ cupbrown sugar(packed)
1 cupunsalted butter(melted)
Apple Filling
3 apples(peeled, cored, and diced)
1 tablespoonlemon juice
2 tablespoonsgranulated sugar
1 teaspoonground cinnamon
Glaze
1 cuppowdered sugar
1-2tablespoonsmilk
¼teaspoonvanilla extract
Instructions
Preheat oven to 350℉ and grease bundt pan with butter or cooking spray.
Peel, core and dice apples into 1/4-inch pieces. Toss with lemon juice to prevent browning, and sprinkle with 1 teaspoon cinnamon and 2 tablespoons granulated sugar.
In a saute pan, melt 1 tablespoon butter over medium heat. Add the apples and saute for 7-10 minutes, until soft. Cool slightly.
Open the biscuit tubes and cut each biscuit into four bite-sized pieces.
In a small bowl, combine 1 cup of granulated sugar and 2 teaspoons of cinnamon. Stir to combine.
Gently drop dough pieces into the bowl and cover with the cinnamon sugar mixture.
Alternate layering diced apple and dough bites in the bundt pan.
Then, in a small saucepan, add 1 cup unsalted butter, 1/2 cup brown sugar, and 1/2 cup of the remaining cinnamon-sugar mixture from the dough. Stir gently and bring to a boil. When sugar is dissolved, drizzle the sauce over tbe bundt pan.
Bake for 30-35 minutes or until done. Allow the monkey bread to rest for approximately 5 minutes. Then invert onto a large plate. Drizzle with glaze (optional) and serve warm.
