Ingredients
2Tablespoonsunsalted butter
½poundfresh shrimp, peeled and deveined
1 teaspoonPampered Chef garlic and herb rub
2 clovesgarlic, minced
3green onions, sliced
2Tablespoonsfresh lemon juice
1package(8 ounces) low-fat cream cheese, softened
1cupshredded Mozzarella cheese(divided)
½cupshredded Asiago cheese
¼cupshredded Parmesan cheese
2Tablespoonslow-fat sour cream
chopped parsley and additional Parmesan Cheese(for garnish)
Instructions
Preheat oven to 350℉.
Prepare ingredients by slicing 3 green onions and mincing 2 cloves of garlic.
Coarsely chop shrimp. Melt butter in a large skillet over medium heat and add shrimp, green onions, minced garlic, and herb rub. Cook mixture for 2-3 minutes, or just until shrimp are pink. Squeeze in fresh lemon juice.
Reduce heat to low and add cream cheese. Stir until melted.
Shred all cheeses. Add sour cream, Asiago, Paremsan, and one-half cup Mozzarella. Stir until just combined.
Spoon dip onto baking stone and sprinkle with remaining cheese.
Bake dip in the over for 25 minutes. Then turn oven to broil and broil dip on low for 3-5 minutes or until golden brown.
Garnish with fresh, chopped parsley and serve warm.
