I feel like a bit of a broken record, but I can’t believe that the holidays are sneaking up so quickly! There are so many things I love about this time of the year. And right near the top of my list is the food.

Whether you’re cooking for a crowd or just enjoying a quiet Christmas at home, my friends and I from supper club have got you covered. Once again I’ve teamed up with my blogging besties Anne, AnnMarie, Michele, Rachel, Stacy, and this month’s supper host, Kelly, to bring you six brand new recipes, just in time to help you plan your holiday meal.

Our Christmas dinner menu includes everything from appetizers and drinks to delicious desserts. We’ve taken all of the stress out of planning your meal. All that’s left for you to do is to cook and enjoy!

Creamy Tortellini Soup With Kielbasa

A soup and sandwich bar was always a Christmas Eve tradition at my grandparent’s house. As a child, I remember all of the cousins and aunts and uncles gathering in the kitchen, jostling for a spot in line. It was first come, first serve, and none of us wanted to miss out on our favorite.

As an adult, my mom has carried on the tradition at our family gatherings, and I’m so happy she has. To me, there’s just something about soup that makes a meal during the holidays feel extra cozy.

Loaded with cheese tortellini, kielbasa sausage, and a creamy broth, this soup is the perfect way to warm up on a cold winter day. You can serve it as a side dish, or it’s filling enough to have as the main course, too. And, it’s ready in under an hour, so you can spend less time in the kitchen and more time with your family making special memories.

Ingredients for Creamy Tortellini Soup With Kielbasa

  • 12 ounce package cheese tortellini
  • 1 clove garlic, miced
  • 1 cup onion, chopped
  • 2 tablespoons unsalted butter
  • 1 cup celery, chopped
  • 1 cup carrots, chopped
  • 3 tablespoons all-purpose flour
  • 6 cups low-sodium chicken broth
  • 1 cup kielbasa sausage, sliced into 1 inch pieces
  • 1/2 cup heavy cream
  • 4 cups fresh spinach
  • salt and pepper to taste

Instructions for Creamy Tortellini Soup With Kielbasa

First, prep and finely chop all of your vegetables. Next, melt some butter in a large stockpot or dutch oven over medium heat. Once it’s melted, add the chopped onion, carrots, and celery and saute the mixture for 3-5 minutes or until the vegetables are tender.

Note: I don’t like cooked carrots or celery in my soups or casseroles so I didn’t add any. If you’re picky about your vegetables like me you can skip this step. The soup is still just as delicious without them.

After the vegetables are cooked, add the minced garlic and stir for an additional minute. Then add the all-purpose flour to the pot and stir it in until well combined and all of the vegetables are coated.

Now it’s time to add the broth. Slowly pour it over the vegetable mixture, and stir as you pour. Next, dump in the sliced kielbasa sausage. I love to use turkey kielbasa for this recipe, but you can use any kind you want. Stir the soup and simmer on medium heat for 5-7 minutes.

After the soup has reached a simmer, stir in the tortellini pasta. Put the lid on your pot and cook the pasta according to the directions on the package or until it is tender.

Once the tortellini is cooked, add in the cream and fresh spinach. Stir until well mixed, and the spinach begins to cook down. To finish the creamy tortellini and kielbasa soup, season it with salt and pepper as needed and serve immediately.

Try this soup with some soft and flaky cheddar biscuits, and finish your meal with some double chocolate chip peppermint cookies for dessert.

How To Store The Leftover Soup

Let the soup cool completely before pouring it into an air-tight food storage container. Then put the leftovers in the fridge. The soup is best when eaten within 2-3 days.

Ingredients

  • 1 package cheese tortellini (12 ounces)
