Aloha friends! Today, my friends from supper club and I are back for part two of our luau dinner party to bring you six new recipes that are perfect for any summertime get-together.

Fresh and Easy Pineapple Salsa
This month for supper club, I was in charge of the appetizer. And since I love to make fresh homemade salsa each summer, this pineapple version seemed like the perfect easy recipe to make.
Of course, you don’t need to host a luau to make this salsa. It’s great for dipping with tortilla chips.
It also pairs perfectly with all of your grilled summertime favorites like chicken, fish, or pork. (Oh…and it tastes great with tacos, and shredded chalupa, too!)
The sweet and spicy flavors combined taste ah-mazing. Be warned. Once you start to eat this salsa, you might not be able to stop!
Ingredients For Fresh and Easy Pineapple Salsa
- 1 cup fresh diced pineapple
- 1/2 cup diced yellow bell pepper
- 1/2 cup orange diced bell pepper
- 1 cup diced Roma tomatoes
- 1/4 cup chopped cilantro
- 1/4 cup minced red onion
- 4 tablespoons lime juice
- 1/4 teaspoon black pepper
- 1/8 teaspoon salt
- 1 tablespoon diced jalapeno (optional)
How To Make Fresh and Easy Pineapple Salsa
(A quick note before we begin. I think fresh pineapple tastes best for this recipe, but if you’d like to save some time, canned pineapple will work too.)
To make fresh salsa, cut the top and the bottom off your pineapple. Then cut the pineapple into two halves and carefully remove the core.
Once the core is removed, cut the pineapple into quarters. Dice one cup of pineapple for the salsa recipe.
Then place the rest in an airtight food storage container and keep it in the fridge to eat later (or use it to make a second batch of salsa).
Next, in a small serving bowl, mix together the diced pineapple, one cup of diced Roma tomatoes, one cup of diced bell peppers, 1/4 cup of minced red onions, 1/4 cup of chopped cilantro, and four tablespoons of lime juice.
If you like your salsa with a bit more heat, you can also add a bit of diced jalapeno. I’m not a huge spicy food fan, so I opted to leave them out.
Once all of the ingredients have been added to the bowl, mix well and season your fresh pineapple salsa with salt, and pepper.
You can enjoy it right away, or place it in the fridge for 1-2 hours to flavor and chill before diving in.
Can You Make The Salsa Ahead Of Time?
I think the pineapple salsa is best when it’s served fresh the same day, but you can make it in advance and keep it in the fridge overnight.
To save time, you can also dice and chop all of the ingredients a day ahead of time.
Store the pineapple and the diced vegetables in separate food storage containers and then mix the salsa together just before you serve it.
Additions To the Salsa
Mix it up and try adding these other fresh ingredients to your pineapple salsa.
- Black beans
- Corn
- Red and green bell peppers

Recipe for Fresh and Easy Pineapple Salsa
Fresh and Easy Pineapple Salsa
Ingredients
- 1 cup fresh diced pineapple
- ½ cup diced yellow bell pepper
- ½ cup diced orange bell pepper
- 1 cup diced Roma tomatoes
- ¼ cup chopped cilantro
- ¼ cup mined red onion
- 4 tablespoons lime juice
- ¼ teapsoon black pepper
- ⅛ teaspoon salt
- diced jalapeno to taste (optional)
Instructions
- Core and chop 1 cup of fresh pineapple or 1 cup of canned pineapple.
- Dice 1 cup of bell peppers, and one cup of Roma tomatoes. Then chop 1/4 cup cilantro and mince 1/4 cup red onion.
- In a small bowl, mix together the pineapple, tomatoes, peppers, onions, and cilantro. (If you prefer salsa with a bit of a kick, add your diced jalapenos here.)Pour in 4 tablespoons of lime juice, season with salt and pepper, and stir until combined.
- You can enjoy the salsa immediately, or you may chill and flavor it in the fridge for 1-2 hours before serving.
