Simple Apple Fritter Monkey Bread

Fall apple season is just around the corner, so today, I’m sharing a total crowd-pleaser: Simple apple fritter monkey bread.

There are many different kinds of monkey bread, but this one has to be one of my ultimate favorites.

This pull apart apple fritter monkey bread is always a hit and It’s easy to see why.

What’s not to love about warm, soft dough filled with bits of apple and then drizzled with a sweet glaze.

Simple Apple Fritter Monkey Bread

Yep, it’s as good as it sounds!

Who says you can’t have dessert for breakfast, anyway?

Apple fritter monkey bread is the best of both worlds!

It’s basically like a traditional monkey bread with apple pie filling.

And just like my easy cinnamon-sugar monkey bread recipe, this monkey bread uses store-bought refrigerated biscuits from the tube.

It’s perfect for breakfast or brunch, or serve it up as a delicious dessert to finish off your meal.

Ingredients for Simple Apple Fritter Monkey Bread

Apple Filling

  • 3 apples, peeled, cored, and diced
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter

Monkey Bread

  • 3 (8 oz.) tubes buttermilk biscuits 
  • 1 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup brown sugar, packed
  • 1 cup unsalted butter, melted

Glaze

  • 1 cup powdered sugar
  • 1-2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Equipment Needed

  • Mixing bowl
  • Cutting board
  • Paring knife
  • Apple Corer
  • Measuring cups
  • Measuring spoons
  • Skillet
  • Bundt pan

How to Make Simple Apple Fritter Monkey Bread

Step 1: Preparing the Apple Filling

To begin, preheat the oven to 350℉.

While the oven preheats, generously grease a bundt pan with butter or cooking spray.

Then, peel, core, and dice the apples into 1/4 inch pieces.

I used Fuji apples for this recipe, but you can use any variety you like, such as Gala, Pink Lady, or Granny Smith apples.

Preparing the Apples

Put the diced apples in a medium-sized mixing bowl and toss them with lemon juice to prevent the apples from browning.

Then sprinkle them with two tablespoons of granulated sugar and one teaspoon of ground cinnamon.

Cooking the apple mixture for apple fritter monkey bread

Add the apple mixture to a skillet with one tablespoon of butter and saute over medium heat until the apples are soft and cooked through. (Approximately 7-10 minutes.)

Step 2: Preparing the Monkey Bread

While the apple mixture cools, open the tubes of biscuits and cut each biscuit into four bite-sized pieces.

Next, combine the granulated sugar and cinnamon in a small bowl and mix well.

Gently drop the biscuit pieces into the bowl and cover each piece with the cinnamon sugar mixture.

Alternate between adding layers of the diced apple and biscuit dough in the bundt pan. 

Making Simple Apple Fritter Monkey Bread

Then, in a small saucepan, add one cup of unsalted butter, 1/2 cup of brown sugar, and 1/2 cup of the remaining cinnamon-sugar mixture.

Stir gently and bring to a boil. Once the sugar has dissolved, drizzle the sauce over the bundt pan.

Step 3: Baking the Apple Fritter Monkey Bread

Place the bundt pan into the oven and bake for 30-35 minutes or until your homemade apple monkey bread is done.

Carefully remove the pan from the oven and allow your homemade apple monkey bread to rest for approximately 5 minutes.

Then, invert the bundt pan onto a large plate.

Step 4: Making the Monkey Bread Glaze

To make the glaze, mix one cup of powdered sugar with 1-2 tablespoons of milk and 1/4 teaspoon of vanilla extract.

Drizzle over the monkey bread with apples and serve warm.

Leftovers are not likely.

But, on the off chance your apple monkey bread doesn’t get devoured immediately, place the extra monkey bread in an airtight container and refrigerate for up to 5 days.

Simple Apple Fritter Monkey Bread

This simple apple fritter monkey bread is easy to make and irresistibly good! With bits of fresh apple and a sweet glaze, it is perfect for breakfast or dessert.

Ingredients

Monkey Bread

  • 3 tubes buttermilk biscuits (8 ounces each)
  • 1 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • ½ cup brown sugar (packed)
  • 1 cup unsalted butter (melted)

Apple Filling

  • 3 apples (peeled, cored, and diced)
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Glaze

  • 1 cup powdered sugar
  • 1-2 tablespoons milk
  • ¼ teaspoon vanilla extract

Instructions

  • Preheat oven to 350℉ and grease bundt pan with butter or cooking spray.

  • Alternate layering diced apple and dough bites in the bundt pan.
  • Then, in a small saucepan, add 1 cup unsalted butter, 1/2 cup brown sugar, and 1/2 cup of the remaining cinnamon-sugar mixture from the dough. Stir gently and bring to a boil. When sugar is dissolved, drizzle the sauce over tbe bundt pan.
  • Bake for 30-35 minutes or until done. Allow the monkey bread to rest for approximately 5 minutes. Then invert onto a large plate. Drizzle with glaze (optional) and serve warm.

    Do you think this could be made the day before and stored in the fridge until ready to bake?

      Hi Morgan, I’ve never actually tried it that way, but I’ll have to test it so I can update the recipe. My only concern might be that the apple filling could make the uncooked biscuit dough a bit soggy, but it might not be an issue at all. If you do give it a try, I’d love to hear how it turns out!

    How do you reheat the monkey bread after you’ve refrigerated the leftovers?

      Hi Jess, If I am heating up a single serving, I’ll often just pop a bit in the microwave and reheat in 15-30 second increments until it’s warmed through. If there is a lot leftover, place it on a baking sheet, cover with foil and reheat at 250 F for about 7-10 minutes, or until warm.

    Can Pillbury Flaky biscuit dough be used in place off the buttermilk biscuit? I’m not able to find the buttermilk kind in any of our grocery stores in Calgary, AB.
    I’d really Iike to make this for Christmas morning.

      I’ve never tried it with that variety of biscuits, but I’m sure it would work just fine. The bits of monkey bread may just be a bit more flaky once they bake (as the biscuit name would suggest) I hope you enjoy it and Merry Christmas!

        I am making this now. It looks and smells wonderful. Just an FYI in #5 it says combine the rest of granulated sugar and cinnamon there is not any cinnamon in any of the ingredients except for the apples. I just added some but in #8 it also refers to the rest of cinnamon sugar mixture and if you put the whole cup on the biscuits it would be confusing. I am sure it will taste amazing.

          Oops! Problem number one, I see that I forgot to include the cinnamon in the ingredients for the biscuits. And I can see that number 5 was definitely worded very confusing. I’ve fixed both, so hopefully, the recipe makes more sense now. Thank you for asking and I hope you enjoy!
